The idea of adding papad to a curry may not sound appetising although on my recent trip to Rajasthan this is one dish I couldn't get enough of. Papad Ki Subzi needs very few ingredients and has a flavor that is distinct and fabulous. Papad ki sabzi is a rajathani dish , which i learnt from my friend very long back. I noted down the recipe in my book but forgot to try.
Instructions to make Rajathani papad ki sabji (onion, tomato curry):
- Fry the papads in oil.
- In a kadai heat, oil add mustard, jeera, pinch hing and few curry leaves.
- Add onion and tomato, green chilli saute well for 5 mins.
- Add ginger- garlic paste and saute well.
- Add turmeric,red chilli powder and coriander powder,salt - saute on low flame.
- Add 1 cup water and curd.
- Stir continuously on low flame till the curd combines well.
- Add fry papad roughly into curry. mix well.
- Simmer for 2 minutes or more.
- Add garam masala, kasuri methi and 2 tbsp coriander. mix well
