My mom would add all the spice powders that I have added in this recipe, except chaat masala. Kurkuri means crispy, and Bhindi translated to Okra. Bhindi are slit and are deep fried after coating with a mixture of besan with many spice powders like coriander powder, cumin powder, chaat masala, kashmiri red chilli powder and more. Steps to make Kurkuri bhindi chaat:
  1. Wash & Slit the okra thinly & remove the seeds.
  2. Add 1 tsp (or as per your tatse)of each masala into it along with gram flour and rice flour. Mix well & then add a tbsp of water. Agin mix well to ensure even coating.
  3. Heat up oil for deep frying of bhindi or okra. Fry it on a high flame till it gets crispy. Remove from oil on a kitchen paper.
  4. For making the chaat, assemble the kurkuri bhindi with chutneys and beaten curds. Top it with some sev. Enjoy
