I know - technically, this probably would have been a better fit for Meatless Monday. It's a nice way to change up spaghetti and make it something a little more veg-friendly and, um, what's the word? This is rather like a spaghetti alla vongole but made with mussels. However, it's a cheaper option as clams have thick, heavy shells and While the pasta is cooking, heat the olive oil in a pan and cook the shallots, garlic and chilli briefly for a minute on a low heat, then add the reduced wine and fish stock.

- Let’s boil the water first in a wok/pan. Once the water starts boiling, add 1/2tsp of salt and 1tsp oil. Now add spaghetti. let it cook on medium flame. Once spaghetti are 80% cooked, turn off the flam and now drain the water from spaghetti and put the cold water on it.
- Soak dry red chilli over night in the warm water. Now put the soaked red chillies in a blender, add garlic cloves, little bit of salt, sugar and blend them to make the paste.
- Now take oil in a pan, when oil is hot, add chilli garlic paste on a pan. Let’s cook chilli garlic paste for 3-4 minutes. Now paste is completely cooked. Now add chopped onion and cook the onion till they go soft. Now onions are soften. Let’s add the sliced mushrooms
- Cook the mushrooms till they leave all the water. Now add boiled spaghetti, cover with the lid and cook for another 2-3 minutes. Now chilli garlic mushrooms spaghettis are ready. Switch off the flame. Now add salt as per your taste and crushed black pepper if you want and serve it hot😋
Add the spaghetti and return to the boil quickly, then cook until al dente. Finely chop the garlic and parsley together. Heat the oil in a frying pan over a low heat. Drain the spaghetti lightly, then add to the frying pan with the water still clinging to it. Meanwhile, boil the spaghetti, then drain.
