  2. Take 1 head Cabbage
  3. Make ready 1 1/3 lb beef for stew (cut 1in x 1in)
  4. Prepare 1 1/3 lb pork shldr blade (cut 1in x 1in)
  5. Prepare 13 oz beef smoked sausage
  6. Take 1 medium golden onion (chopped)
  7. Make ready 1 1/2 lb mushrooms (chopped)
  8. Take 1 dash salt (up to cook)
  9. Make ready 1 dash pepper (up to cook)
  10. Take 5 small bay leaves
  11. Make ready 1 cup water (to cover kraut once in pot)
  12. Make ready 1 can tomato paste

Add the apples, the tomatoes, peppercorns, and bay leaf. Served with steamed potatoes or rye bread. This recipe for bigos makes a hearty, long-simmered meat-and-sauerkraut stew that goes back centuries and is a national dish of Poland. It was traditionally served at the start of the hunting season, from fall through Shrove Tuesday, or until the family's supply of barrel-cured sauerkraut ran out.

Steps to make Hunter's Kraut:
  1. Wash all vegetables!
  2. Drain 32oz of Saurkraut in a strainer. Press Saurkraut to get rid of any extra undrained Kraut-water.
  3. Slice cabbage head in half. Continue slicing cabbage to match the thinness of the Saurkraut.
  4. Prepare 4-6in deep pot, preheating at low heat on a stovetop burner.
  5. Layer cut beef along bottom of 4-6in pot, bring heat to medium, let cook 50-70 minutes.
  6. As beef is cooking, pile cut pork on top of the beef, continue cooking at medium heat through the earlier advised 50-70 minutes. Cover pot.
  7. Add all thinly sliced cabbage to a 5-7in pot, on low heat.
  8. (optional) Add splash of vegetable broth to cabbage in 5-7in pot.
  9. Add bay leaves to 5-7in cabbage pot.
  10. Add water to 5-7in pot (1inch from top of cabbage). Cover pot. Cook for 40-45 minutes until clear.
  11. Melt butter on a pan. Add chopped onions to melted butter-pan.
  12. Add drained Saurkraut to cabbage after 20 minutes of boiling.
  13. Add sliced smoked Beef Sausage to meat-pot after pork and beef have cooked for 40 minutes.
  14. Take sliced mushrooms and add them to the onion pan. Cook until ready.
  15. Put everything together and let cook.

In a large pan, brown bacon, kielbasa and pork shoulder over medium heat. Once brown, remove and set aside. Bigos is almost a Polish national dish. This is a traditional recipe from Poland. Bigos is a rich flavorful stew with sauerkraut, Polish sausage, beef, pork, red wine, caraway seeds and more.
