You can give them these chilas in tiffin and it will remain softer than other chilas and they would. Usually for making aloo chaat, potatoes are deep fried till crispy. But here I have roasted the boiled potatoes till golden on a tawa.
Instructions to make Potato Pancakes (Aloo Cheela):
- Wash the potatoes nicely. Peel and grate the potatoes. Add salt to the grated potatoes and let it rest for 10 minutes.
- After 10 minutes, squeeze out the starch water completely from the potatoes.
- In a large mixing bowl, add the grated potatoes and all the above mentioned ingredients except oil and mix well.
- Heat a dosa pan. Add butter or ghee on the pan. Take a large portion of the mixture and shape it with the help of your palms and place in on the pan. Spread it out with your finger tips so that it becomes like a potato cheela. When it becomes golden brown on one side, top it with little ghee or butter and flip over to allow it to cook on the other side too. When golden brown, remove and serve warm with green chutney/curd/sauce etc.
However you can also deep fry them if you prefer crisp fried aloo in the chaat. Great as a side dish or for snacking! These travel well wrapped in foil for the lunch box.
